PP - Aloo Matar Tikki

Ingredients:

4-5 medium sized potatoes
Fresh green peas (matar)
4 tsp Chaaat Masala
Cornflour
Salt
Coriander leaf 
Green chilly
2 tsp lemon juice
1 tsp bhuna cumin seeds/ jeera
Oil for frying

Method:
First of all boil the potatoes and after they are cold, peel them and mash them in a bowl. Keep in mind that no cold water goes in else they will be difficult to hold.

Add two tsp chaat masala, salt. Also add some Cornflour to it.

Take the green peas and blend them till they are still of a thick consistency. Make sure you don't blend in purée form.

Take a pan and sauté the green peas a little and then transfer them in a bowl. Add lemon juice, green chilly, coriander leaves, bhuna jeera, chaat masala and some salt to taste. Mix all of this well.

Take the potato mixture and start rolling them in little balls and start filling in the green pea mixture. You can give it any sharpe you like.
After this is done, start deep frying in hot oil.


Serve with onions and chutney and enjoy the homemade aloo matar tikkii!!!




Shahi Halwa

Ingredients:

1 cup sooji
1 cup ( flour, besan and maida) mix all of it in equal proportions to make one cup
A little less than 2 cups of sugar
Desi ghee
Cardamom powder 1/2 tsp
1/2 tsp fennel seeds, saunf
1 piece dalchini, 1 tablespoon ,magaj
4 cups water
Almonds, dates and pistachios for garnishing

Method :

Take a pan and add desi ghee
Add all dry ingredients and let it cook well on low flame till it turns brown
Take a separate pan and make sugar syrup. While boiling the water, add sugar and cardamom , saunf and dalchicni.
After this is done, use a strainer and add it to the pan where you have cooked the dry ingredients. Keep stirring it and then let it simmer on a slow gas for about ten minutes.

To garnish, add halwa in a serving bowl and cut almonds, dates and pistachios. Sprinkle small cardamom over it.

And here is the delicious evergreen halwa ready in just minutes!!  Serve hot"

Neemki Himachali Pickle

Ingredients
2 unripe mangoes
2 onions
1 tsp Turmeric
1/2 tsp ajawain 
1 table spoon red chilly powder
1/4 tsp methi powder
4 tablespoon sugar
Sale to taste
Mustard oil

Method:
Wash the mangoes and cut them in long length and slice it thin. Do the same with onions.
Mix all the above ingredients very well and your instant pickle is ready to eat after one hour!!

Ingredients

All purpose flour (maida)-2 cups
Flour- 1/2 cup
1 tsp baking powder
4 tablespoon yogurt
1/2 tsp sugar
A pinch of salt
2 tsp olive oil

Method,
Add water to knead the dough with all above ingredients . Keep it for fermentation , for at least 8 hours.

Add oil to a frying pan and keep it hot till you make round shaped pedas (balls). 
Apply a little oil on all of them and start rolling and frying your bhaturas.

Serve it nice and hot with the pindi chana recipe shared in my previous post.

Now no need to rush to the market for eating chana bhatura. Hope you all try this delicious recipe.

Dear friends, 

This is finally going to be my first post after giving much thought to what to post as the first recipe. So well here you go!

Pindi CHana




Ingredients :
1 cup white chana
1 onion
1 tomato
3 green chillies
1 spoon garlic ginger paste
Table and rock salt as per taste 
1 spoon red chilly powder
1 spoon cumin powder
1 spoon cilantro 
1 spoon aamchur powder 
1/2 teaspoon garam masala
1 teaspoon chana masala
1 potato  
Oil 

Recipe. To start cooking
Take the chanas with salt, little bit of tea leaves to give colour, two tejpatas, and boil them in a cooker with minimalistic water.

Put the boiled chanas in a non stick pan and add all the dry ingredients above. Add finely chopped onion, tomato, green chillies, garlic ginger paste and also a little bit of rock salt to taste.

After that, heat a little koi land add it to the pan with chanas and mix it all well. Give it 15 minutes to cook with the lid of the pan.

And there goes your pindi chana ready to serve.


Tips for garnishing:

1. Cut potato in long pieces and fry it 
2. Garnish it with onion, tomato, cilantro, fried potato and green chilles.
